EJ loves khichdi.
A very easy to cook meal as well as easy on the stomach, EJ would throw in whatever is found in the fridge. Each time it would taste different and nice.
Here is EJ's version for this meal. Boiled with the rice is seaweed, cubed carrots, tofu, green peas, corn and chopped leftover Chinese cabbage. Throw in some salt, a teaspoon of sesame oil and pepper to taste.
In other parts of Asia, Khichdi is known as congee.

I've always wondered what congee is. This looks very healthy and easy to make. I'd like to make it but will have to wait for a time my hubby isn't eating with me. He's think I ws starving him. Thanks for sharing EJ's recipe!

As a veggie I think this is a YUMMY DISH!!! I LOVE RICE AND TOFU!! I must find some seaweed!!! Maybe Charlie could get me some from next door - LOL!!

Oh okay congee is easy to pronounce LOL! It looks tasty, sometimes we add saffron to congee.
Oops! Should have explained that Khichdi is Hindi for a simple gruel of rice with lentils or vegetables or meat. Very easy to cook -- just throw everything or whatever you have in. :)

Well this looks delicious!-my mom used to make a lot of soups and your post is putting me in the mood..besides, I'm hungry! There is a version for this here on the islands..or same idea (in the old days they used a big pot called a "Calabash" (not the only meaning) and made a big soup from it (usually Saimin, or a variation thereof)..I was after something more and like that header flower- it eludes me? I will get back on it- I think a nice meal spices up blogs nicely..hope you have a wonderful weekend!
