Great Lazy Man's Food

On days when you are too busy or lazy to cook, most will eat out or phone for pizza delivery. Being a vegetarian like EJ, it is difficult unless you are willing to drive out to vegetarian restaurants that could be located some distance away.

So what EJ does is stock up vegetarian food mostly in the freezer. And on such lazy-to-cook days, EJ whips up lunch or dinner in less than 10 minutes.

Ingredients
Hashbrowns (stored in the freezer)
Vegetarian ham (stored in the freezer)
Baked beans

This method is so easy. Place hashbrowns on dish. Cut vegetarian ham into smaller pieces and arrange on dish.

Open a can of baked beans and spoon it over the hashbrowns and ham. You can also add vegetarian sausages if you wish.

Microwave and voila! Dinner's ready!

Vegetarian ham and other stuff can be bought from the vegetarian corner of most bigger supermarkets or vegetarian shops. Most vegetarian mock meat is made from soya which is an excellent source of high quality protein.

PS: EJ is a vegetarian due to intolerance and allergy, not religion or obligation as most people assume.

I don't eat red meat or pork and have found some "fake" meat that I like...I eat Morning Star "fake" bacon and it's good if you cook it in the toaster oven, not as good in the microwave...and Boca vegan burgers are good...I haven't eaten meat in 15 years so I might not remember what real meat is supposed to taste like though!...Happy Friday EJ.

What about a fresh salads? U can use olive oil & balsamic vinegar. I keep broccoli , cauliflower, tomato, peppers ( red/ yellow/green) carrot, fresh button mushrooms in the fridge at all times. Add some sliced black olives(brine preserved - readily obtainable in Supermarkets).Really picks u up after a lunch or dinner like this.
On days when I really feel like vegetating (pardon the pun!) I just open a can of sweetcorn (Friendly Green Giant brand) and just spoon that into my mouth. haha!

Oh wow!! this is so brilliant and yummy!! I'm a veggie now for over 20 years and am lovin it! Charlie however turns his furry nose at anything green - apart from cat grass - the silly thing!

That does look like a good recipe. I don't feel like cooking every night, so I need ideas like this. But I can't eat a lot of soy. So I usually just have a little salad with lettuce, spinich,carrots and maybe a little tuna. Can't afford too much meat.

I don't eat a lot of meat either, I like chicken, turkey and fish. My DIL is also vegetarian but she also eats eggs and fish but no meat.
Your plate looks very yummy !

It amazes me that there is so little effort put into helping those of us who do not eat processed foods. Or food that is "different" from what the mass sellers want to sell to us. I don't always feel like cooking either, and my choices are restricted...so we eat at home 99% of the time!

This is a great idea. I need to stock up on items like this in the freezer more often. I hate when I'm caught with no food. It happens more than I'd like to admit. Also, I'm always interested in quick, meatless meals.

Reactions were not pleasant at all and at one point life threatening. I wouldn't want to go on steriods.

Au and Target:
Thanks for your suggestion, if utensils are not cleaned properly after contact with meat, my body will get upset. So it is not worth the risk.

My granddaughter is a vegetarian so I've found all sorts of meals to cook for her when she comes over.

I'm not vegetarian but have an intolerance to wheat...not gluten, because I can eat oats and rye. Thank goodness there are really yummy gluten free foods now...not like a few years ago when gluten free food was horrible. My local health food shop even has lovely gluten free raisin bread which I can toast and it's delicious.

And I'm like you, there's no way I want to take steroids either. I was give some steroid cream once for a bad allergic reaction...dreadful stuff. I go with natural things now and they work just as well.
